Από τα αγαπημένα μας γλυκά είναι ο χαλβάς και ειδικότερα ο σιμιγδαλένιος. Το καλοκαίρι, στις διακοπές ο απογευματινός καφές συνοδεύεται πάντα από ένα κομμάτι χαλβά αφού η αγαπημένη πεθερά μου φροντίζει πάντα να μας το φτιάχνει όταν την επισκεπτόμαστε. Γίνεται κυριολεκτικά μάχη για το ποιος θα προλάβει να φάει το περισσότερο.

ΣΙΜΙΓΔΑΛΕΝΙΟΣ ΧΑΛΒΑΣ

6-8 άτομα
Προετοιμασία: 5 λεπτά – Μαγείρεμα: 30 λεπτά
ΥΛΙΚΑ
1 φλ. ελαιόλαδο
2 φλ. σιμιγδάλι χοντρό
3 φλ. λευκή ζάχαρη
4 φλ. νερό
1 φλ. χοντροκομμένα αμύγδαλα
1/2 φλ. κουκουνάρι
1 φλ. σταφίδες
κανέλα
ΕΚΤΕΛΕΣΗ
Σε μια μεγάλη κατσαρόλα, διαλύουμε την ζάχαρη στο νερό και φέρνουμε σε βρασμό. Βράζουμε για 5 λεπτά από το σημείο βρασμού και αποσύρουμε από την φωτιά.
Σε μια μεγάλη βαθιά κατσαρόλα βάζουμε το ελαιόλαδο και το σιμιγδάλι και καβουρδίζουμε σε μέτρια προς δυνατή φωτιά, ανακατεύοντας διαρκώς (περίπου 4-5 λεπτά). Προσθέτουμε τα αμύγδαλα, το κουκουνάρι και τις σταφίδες. Όταν το σιμιγδάλι έχει πάρει ένα χρυσαφί χρώμα, προσθέτουμε προσεκτικά το συρόπι (να είστε προετοιμασμένοι, θα βγάλει πολύ ατμό). Χαμηλώνουμε την φωτιά και ανακατεύουμε μέχρι το μείγμα να πήξει καλά και να ξεκολλά από τα τοιχώματα της κατσαρόλας. Ρίχνουμε το μείγμα σε μια αντικολλητική φόρμα για κέικ και ισιώνουμε την επιφάνειά του με το πίσω μέρος ενός κουταλιού. Αφήνουμε στην άκρη να κρυώσει.
Ξεφορμάρουμε σε μια πιατέλα και πασπαλίζουμε με κανέλα. Κόβουμε σε φέτες και σερβίρουμε.
Σημ.
Είναι απόλυτα φυσιολογικό με την πάροδο των ημερών, το γλυκό να “βγάλει” λάδια, απλά στεγνώστε το με χαρτί κουζίνας.
One of our favorite desserts is halvas and especially the one made with semolina. During our summer vacations, we always enjoy a piece of halvas with our afternoon cold coffee. It’s another recipe from my mother’s in law huge recipe collection.

GREEK HALVAS WITH SEMOLINA

6-8 servings
Preparation: 5 minutes – Cooking: 30 minutes
INGREDIENTS
1 cup olive oil
2 cups semolina
3 cups white sugar
4 cups water
1 cup chopped  almonds
1/2 cup  pine nuts
1 cup raisins
cinnamon
DIRECTIONS
Dissolve the sugar in the water and bring it to simmer. Boil for 5 minutes and remove from heat.
In a large deep pot put olive oil and semolina and brown on medium-high heat, stirring continuously (this should take 4-5 minutes). Add the almonds, the pine nuts and raisins. When the semolina has taken a golden brown color, add carefully the syrup to it (it will bubble and steams up excessively- be prepared!), turn down the heat and keep stirring until you get a kind of thick porridge. Continue cooking until the mixture is very thick and pulls away from the sides of the pan as you stir. Spoon into a buttered or oiled bundt pan and pack down with the back of a spoon. Let it cool.
Unmold onto a platter and sprinkle with cinnamon. Cut into slices and serve.
Just a note
Some oil may start to drain off after a day or so, but this is to be expected, just dab it away with some kitchen paper.
