GREEK ORANGE SYRUP PIE
Makes 10-12 pieces
Preparation: 15 minutes – Baking: 30 minutes – Waiting: 2-3 hours
1 cup olive oil
450 gr. phyllo crust
200 gr. Greek yogurt
2 tsp baking powder
For the syrup
2 cups white sugar
3 cups water
We start by preparing the syrup to allow it to cool. Place sugar and water in a small saucepan and when it starts to boil, remove from heat. Leave aside to cool.
Wash the oranges and grate them to get their zest. Then squeeze them and keep their juice.
Grease a medium-sized pan. Fold each phyllo crust like a fan and place them next to each other in the pan. In the mixer beat all other ingredients. Pour the mixture over phyllo crust and set aside for about 30 minutes, to absorb the liquids.
Bake the pie at 200oC for 30 minutes, until golden. Remove from heat and immediately pour over the syrup. Let the pie aside for about two hours until it absorbs the syrup.
Keep the pie in the refrigerator and serve it with ice cream, vanilla or bitter chocolate.
