Μπορεί να λατρεύω την σοκολάτα αλλά στα γλυκά του ταψιού έχω μεγαλύτερη αδυναμία. Ειδικά στο Γαλακτομπούρεκο που εάν δεν με σταματήσεις είμαι ικανή να φάω ολόκληρο το ταψί – ανεξαρτήτου μεγέθους. Κάτι το τραγανό φύλλο, κάτι η κρέμα και δεν μπορώ να αντισταθώ με τίποτα.
Το σπιτικό γαλακτομπούρεκο δεν είναι δύσκολο στην παρασκευή του – λίγη προσοχή χρειάζεται μόνο για να μην κόψει η κρέμα. Δοκιμάστε το.

ΓΑΛΑΚΤΟΜΠΟΥΡΕΚΟ

8 άτομα
Προετοιμασία: 20 λεπτά – Ψήσιμο: 1 ώρα

ΥΛΙΚΑ
500 γρ. φύλλο κρούστας
250 γρ. βούτυρο λιωμένο

Για την κρέμα
700 γρ. γάλα φρέσκο
300 γρ. κρέμα γάλακτος
160 γρ. ζάχαρη
2 αυγά
6 κρόκοι αυγών*
80 γρ. κορν φλάουερ
1 κλωναράκι βανίλιας, σχισμένο κάθετα

Για το σιρόπι
500 γρ. ζάχαρη
300 γρ. νερό
20 γρ. γλυκόζη

ΕΚΤΕΛΕΣΗ
Προθερμαίνουμε τον φούρνο στους 160οC – 170oC βαθμούς. Ετοιμάζουμε πρώτα το σιρόπι για να έχουμε χρόνο να κρυώσει. Σε ένα κατσαρολάκι βάζουμε όλα τα υλικά του σιροπιού και βράζουμε για 4 λεπτά από το σημείο βρασμού.
Σε ένα ταψί διαστάσεων περίπου 30×25 εκ. βουτυρώνουμε ένα προς ένα τα μισά φύλλα και τα τοποθετούμε ένα-ένα έτσι ώστε οι άκρες τους να εξέχουν από το ταψί. Σκεπάζουμε με μια πετσέτα για να μην ξεραθούν τα φύλλα και ετοιμάζουμε την κρέμα.
Σε μια κατσαρόλα αδειάζουμε το γάλα και την κρέμα γάλακτος και τα βάζουμε στη φωτιά μαζί με τη βανίλια. Για να μην μας ”αρπάξει” το γάλα, προσθέτουμε και λίγη από τη ζάχαρη. Ανακατεύουμε την υπόλοιπη ζάχαρη με το κορν φλάουερ και όλα τα αυγά (ολόκληρα και κρόκους). Λίγο πριν πάρει βράση το γάλα, ρίχνουμε το 1/3 από το γάλα στο μίγμα των αυγών και ανακατεύουμε καλά για να πέσει η θερμοκρασία και το αδειάζουμε μέσα στο υπόλοιπο γάλα. Συνεχίζουμε το ανακάτεμα μέχρι να δέσει η κρέμα και να αρχίσει να κοχλάζει. Αποσύρουμε από την φωτιά, αφαιρούμε το κλωναράκι βανίλιας και την αδειάζουμε ζεστή κατευθείαν στα βουτυρωμένα φύλλα.
Διπλώνουμε τις άκρες των φύλλων πάνω από την κρέμα και σκεπάζουμε με τα υπόλοιπα βουτυρωμένα φύλλα, τα οποία θα καλύπτουν μόνο το εσωτερικό του ταψιού (κόβουμε ότι εξέχει από τις άκρες).
Ψήνουμε για περίπου 1 ώρα, μέχρι να ροδίσουν τα φύλλα. Βγάζουμε το γλυκό από το φούρνο και ρίχνουμε το κρύο σιρόπι. Αφήνουμε στην άκρη να κρυώσει καλά και κόβουμε σε κομμάτια.

Σημ.
* Τα ασπράδια που θα περισσέψουν, μπορούμε να τα διατηρήσουμε στο ψυγείο σε κλειστό δοχείο για 1 εβδομάδα ή να τα βάλουμε σε παγοθήκες στην κατάψυξη έως 6 μήνες. Προσοχή, δεν τα μαγειρεύουμε κατευθείαν από την κατάψυξη αλλά τα αφήνουμε να ξεπαγώσουμε μέσα στο ψυγείο ή σε θερμοκρασία δωματίου.


No matter how much I love chocolate, Greek pan desserts are by far my favorites. Especially Galaktoboureko, I can eat – without regret – the whole pan, regardless of size. It’s a golden crispy perfection! Galaktoboureko is a traditional Greek one-pan dessert made with layers of golden brown crispy phyllo, sprinkled with melted butter, filled with the most creamy custard and finally bathed in syrup … Simply amazing!

GALAKTOBOUREKO

Preparation: 20 minutes – Cooking: 1 hour

INGREDIENTS
500 gr. phyllo crust
250 gr. butter melted

For the cream
700 gr. milk
300 gr. heavy cream
160 gr. white sugar
2 eggs
6 egg yolks*
80 gr. corn flour (cornstarch)
1 vanilla bean (cut vertically)

For the syrup
500 gr. white sugar
300 gr. water
20 gr. corn syrup

DIRECTIONS
Preheat the oven to 160oC-170oC degrees. Start with the syrup, so as to have enough time to cool. In a saucepan put all the syrup ingredients and bring to boil. Cook for 4 minutes (after the boiling point).
Grease an 30×25 cm baking pan and brush with butter one by one half of the phyllo crust. Place them one by one so that their ends stick out from the pan. Phyllo crust dries quickly so cover the baking pan with a towel while preparing the cream.
In a saucepan place milk, heavy cream and vanilla bean and some of the sugar (so as to prevent the milk from getting “burnt”). Mix remaining sugar with the corn flour (cornstarch) and the eggs. When the milk is hot enough, pour 1/3 of the milk mixture into the egg mixture and mix well (to drop the milk temperature) and pour in remaining milk mixture. Continue stirring until the cream thickens and begins to boil. Remove from the heat, throw away the vanilla bean and pour the warm cream straight into buttered phyllo crust.
Fold the edges over the cream and cover with the remaining buttered phyllo but this time cover only the inside of the pan and cut off the excess.
Bake for about 1 hour, until golden brown. Remove the dessert from the oven and pour over the cold syrup. Let aside to cool and cut into pieces.

Just a Note
* You can keep the remaining egg whites in an airtight container in the refrigerator for up to 1 week or you can place them into ice cube trays and keep them in the freezer up to 6 months. Make sure you allow egg whites to defrost completely in the refrigerator or at room temperature before cooking.
