Ioanna's Notebook - Caesar salad with homemade caesar dressing

Τώρα που ζέστανε ο καιρός, μια νόστιμη σαλάτα μπορεί επάξια να αποτελέσει το μεσημεριανό ή το βραδινό μας φαγητό. Οφείλω να ομολογήσω βέβαια ότι το αγαπημένο μου dressing είναι το Caesar, ο οποίο “απογειώνει” την σαλάτα έστω και αν αυτή αποτελείται μόνο από λαχανικά αλλά λόγω θερμιδών προσπαθώ να το αποφεύγω. 
Πρόσφατα δοκίμασα την “ελαφριά” σπιτική εκδοχή του με γιαούρτι από την Ali του Gimme some oven και πιστέψτε με είναι νοστιμότατη και πανεύκολη! Αξίζει να το δοκιμάσετε.

ΣΑΛΑΤΑ CAESAR ΜΕ ΣΠΙΤΙΚΟ DRESSING

4-6 άτομα 
Προετοιμασία: 10 λεπτά
ΥΛΙΚΑ 
1 μαρούλι απλό κομμένο
1 μαρούλι iceberg κομμένο
1 μαρούλι romaine κομμένο
1 ραντίτσιο κομμένο
1 φλ. καλαμπόκι βρασμένο 
2 φλ. κρουτόν
1/2 φλ. παρμεζάνα τριμμένη συν επιπλέον για το γαρνίρισμα
Για το dressing
1/2 φλ. γιαούρτι με χαμηλά λιπαρά
1/2 φλ. παρμεζάνα τριμμένη 
1 κ.σ. ελαιόλαδο
2 κ.γλ. πάστα αντζούγιας 
2 κ.γλ. worcestershire sauce
1 σκελίδα σκόρδο λιωμένη
1 κ.γλ. μουστάρδα Dijon
1/4 κ.γλ. αλάτι
φρεσκοκομμένο πιπέρι 
2-4 κ.σ. χυμός λεμόνι

ΕΚΤΕΛΕΣΗ

Ετοιμάζουμε το dressing. Ανακατεύουμε όλα τα υλικά μαζί μέχρι να ενωθούν. Στο τέλος προσθέτουμε το λεμόνι, κουταλιά-κουταλιά μέχρι να έχουμε το επιθυμητό γευστικό αποτέλεσμα.
Σε μια σαλατιέρα, ανακατεύουμε τα μαρούλια, το καλαμπόκι, το τυρί και τα κρουτόν και περιχύνουμε με το dressing που ετοιμάσαμε. Πασπαλίζουμε με λίγο επιπλέον τριμμένο τυρί και σερβίρουμε αμέσως.
Σημ.: Μπορούμε να διατηρήσουμε το dressing στο ψυγείο για περίπου 3 ημέρες.
Now that the weather is getting hotter, a tasty salad can be our lunch or light dinner. I must admit that my favorite dressing is Caesar, which “boosts” the salad but due to the calories, I try to avoid it.

Recently I gave a try to the lightened-up Greek yogurt Caesar dressing that Ali from Gimme some oven posted and believe me it is delicious and very easy!

CAESAR SALAD WITH HOMEMADE DRESSING

4-6 servings

Preparation: 10 minutes

INGREDIENTS
1 head of Romaine lettuce, chopped
1 lettuce, chopped
1 Iceberg lettuce, chopped
1 radicchio lettuce, chopped
1 cup corn seeds 
2 cups croutons
1/2 cup grated Parmesan cheese plus extra for toping

For the dressing

1/2 cup non-fat Greek yogurt
1/2 cup grated Parmesan cheese 
1 tbsp olive oil
2 tsp anchovy paste 
2 tsp worcestershire sauce 
1 clove garlic, minced 
1 tsp Dijon mustard 
1/4 tsp sea salt 
pinch of black pepper
2-4 tbsp fresh lemon juice
DIRECTIONS
Prepare the dressing. Whisk all ingredients together until combined and smooth, whisking in
the lemon juice a tablespoon a time at the end until the balance tastes
right to you. Season with additional salt and pepper if needed. 
In a salad bowl toss the lettuces, corn, croutons, the dressing and the cheese together until combined. Top with some extra cheese and serve immediately. 
Note: We can refrigerate the dressing in a sealed container for up to 3 days.
